I stamped fondant for the first time ever, and I’m pretty happy with the result.
Of course, the stamp I used is adorable! Already loved stamps anyway, but never used them. Do you?

It’s yet another cool thing you can do with Fondant. Of course you can buy fondant “texturers” almost anywhere, but searching for cools things around the house seems more fun.

Mini Bruce Lee against Peanut Butter and Jelly Cupcakes

Can he take him?I’ve been on a peanut butter kick lately and I was dieing to bake something with it.

So, dear reader, before you think you think what?!? Never baked with peanut butter?!?! Let me reiterate that I spent twenty years of my life in Brasil (I’m 29), and peanut butter isn’t really eaten in that country AND from the 4 years I’ve been back to the US, I just recently started baking. So many things that my full time American friends take for granted, such as making cookies, brownies and etc are brand new experiences to me.Jam

Was this a tangent? I think it was. I just feel guilty I’ve only made cookies ONCE my whole life. I think I need therapy…

Or maybe mini Bruce Lee can help me? Can he beat that cupcake?!?!? Of course! He’s mini Bruce Lee!!!

So,

as I was saying before, I baked half a batch of peanut butter cupcakes, sans the peanut butter cups, and filled mine with Black Berry Jam. :) They were yummy, that is definetely a recipe I’m keeping.

Maybe I’ll make them for cupcake camp. Which I am excited to say I decided to bake AND volunteer in!

What did I learn this time you say?

Hmmm let me see:

  • Those Cookie Scoops are indeed useful and practical and I need one.
  • The Adjust-A-Cup is great as well, and this I already have.
  • I shouldn’t post on a caffeine rush.

The Rainbow Sherbet one was frosted with leftover frosting from all the other cupcakes! It looks very cute in retrospect. Very 80s Lisa Frank! And the crazy strawberry madness in the back was my cover up for the over whipped Chocolate Ganache (Chocolate Butter!)

There is only one bullet today:

  • In retrospect the ugly cupcakes aren’t too bad.

Limey Cuteness!

Yesterday I introduced you to a few of the cupcakes done on Sunday, today I’ll show you my favorites. Sorry, about the lighting, I was holding on to the last rays of sunshine.

This pretty baby above was done with Wilton M1 tip that comes in their Cupcake Decorating Set, this was my first attempt at a swirl, I still need more practice, but nothing a candied lime won’t fix! If I recall properly this one had the ganache filling,  filled them using a long skinny tip that came in the same set as well.

3 days of cupcakes! Part 1

Sea Creature Cupcake!

Last Sunday, I had a good friend come by to hang out, bake and frost cupcakes!  Apart from the sugar hangover I had on Monday, I had a blast.

We made lime frosting, or should say we added lime juice to the buttercream and then added more powdered sugar to get the consistency back, hey it worked! Also we pumped simple syrup with lime juice into the cupcakes for an extra burst of yummy “limeyness”, you can see it through the liner, the light green area near the bottom. A few had a ganache filling instead, but it kept getting all over the place, so we gave that up.

I tried Wilton’s cupcake recipe since my last batch was a little soft and didn’t really hold it’s shape. The resulting cupcakes while shaped perfectly seemed to be somewhat dry side and a little crumbly. Oh well, I’ll just keep on looking for the perfect cupcake recipe, feel free to give me suggestions! Also, “classic” frosting is too sweet for me, I’d like to try cream cheese frosting soon. Often, I catch myself wondering if chocolate mousse is stable enough, you guys will probably see the results of that experiment, when it happens.
