The Carrot Cake Fiasco

or why you shouldn’t make up recipes when you’ve just started baking.

So, when husband and I started packing (we’re moving), I noticed my favorite cake recipe was gone. This was my perfect recipe that I had modified many times, it could be an almond cake, a spice cake or even a brown sugar spice cake (oh!) and the result was always delectable. We searched the house, even looking behind the fridge, we’re not that messy, mind you, it was a desperate attempt to find it, no dice. I’m not ashamed to say I cried a little, mostly out of frustration because I had been meaning to put it in a folder or a recipe box but never got around to it.

At this point you’re probably thinking, “I read Carrot Cake Fiasco in the title and she’s just being emo about a cake recipe”, it’s coming dear reader, pinkie promise. My better half then suggested I try to remember the recipe since it had been used a million times, which yours truly tried to do, and while doing so the thought sprung in my head that by adding carrots and apple juice to the already uncertain recipe and I could turn it into a carrot cake!

…..Ummmmm no I couldn’t.

What came out of the oven was dense souffle-like food, which was edible at least. (Edible at least is not was I strive for.)
