Strawberry Cobbler (with Amaretto instead of Water!)

Strawberry Cobbler with Amaretto instead of Water?!? Yes it is and it’s pretty tasty too! While playing around with The Bartender’s Bible at a friend’s house, yours truly found out she has an affinity for loves Amaretto, after adding Amaretto to anything I was drinking , adding it to recipes came to mind! (it was either that or AA…)
So here is the recipe the cobbler was based on this recipe for Strawberry Cobbler and below are my modifications:
- 1/4 cup white sugar
- 2 tablespoon cornstarch
- 1 cup Amaretto
- 3 cups strawberries, hulled
- 2 tablespoons butter, diced
- 1 cup all-purpose flour
- 1 tablespoon BROWN sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 tablespoons butter
- 1/4 cup heavy whipping cream
Follow the original directions and you’re good to go!
Please note my mod has double the starch, it was suggested on the recipe’s reviews and it’s truly needed. The Amaretto will not taste “liquory” like rum cake, (it did right off the stove top and that worried me a little) but in the oven it joined the Strawberries in perfect harmony! Oh and the Brown Sugar in the crumb was added to complement the Amaretto’s rich flavor.
This was so yummy, I had to make a second batch to take pictures!

That looks fantastic, I’ll have to give that a try. Whenever I am presented with a “duty free” buying opportunity I get the biggest bottle if Disorono they sell. One of my favorite drinks is Amaretto and Coke (rather than Rum and Coke). It tastes almost like Dr Pepper but with a buzz!
