Marshmallows!

A week later, I know, my first batch didn’t come out so well. Even though the recipe’s directions are very clear, my brain is not (!) and the first time around I boiled the gelatin along the corn syrup and sugar mixture. First batch was very very flat, no matter how long I whipped it.

Second time around: Success!

Making Marshmallows was fun, quick (even though I made them twice) and I learned a thing or two while making them. The elusive soft ball stage is no longer err elusive, and I finally had something to do with the unsweetened chocolate that was sitting in my cupboard judging me.

On their own these babies were way to sweet for my taste so I added Cocoa to the dusting powder (originally just equal parts of rice flour and confectioner sugar) and drizzled the unsweetened Chocolate over them. The unsweetened Chocolate with the Marshmallows is very good (so good I might need to visit a dentist now, because I’ve been noshing on these for days) !
