Shortbread cookies sandwiched with Dulce De Leche, that my friend is an Alfajor, need I say more? Nice people, husband LOVES Alfajor, I do too, but I hadn’t been pining for it like he has been the last months. Baking Bite’s recipe was posted right around husband’s birthday (perfect timing!), and while I truly meant to make it, did not. I also spent few weeks in Brazil, and brought only ONE back for him. (I know that was pretty bad…)

My first baking project post vacation had to be a batch of Alfajor with homemade Dulce de Leche!

Made my own Dulce De Leche (or Doce de Leite where I’m from!) in a slow cooker. Super easy and delicious! The cookies came out a little thicker than I’d like, but still they we’re crazy yummy. Specially one day later when the Dulce de Leche and the Cookies have been together long enough to form a beautiful tasty union. (This was husband’s tip, he loved them so much he thinks I should sell them! I have to say though he didn’t quite describe it as a beautiful tasty union.)

Almond Butter Cookies! They were yummy and my first successful batch of cookies! Granted they’re crazy easy to make. This recipe is a modified version of the Best Peanut Butter Cookies Ever (yes that it’s real name.)!

My mods we’re (freshly ground) Almond Butter and Dark Brown Sugar instead of white, also scratched the Vanilla Extract, the Almond is flavorful enough already, don’t you agree? I experimented adding some Cocoa Powder to a third of the dough (the darker cookies on the plate), but it didn’t work, it was dry and not very tasty, so don’t try it at home, kids.

Ingredients (for 18 cookies):

1 cup Almond butter

1 cup Dark Brown sugar

1 eggs

1 teaspoon baking soda

1/2 pinch salt

I followed the original directions, only the baking took longer than it’s specified, I baked them for 15 minutes, Brown Sugar added more moisture to the dough.

This was fun! I want to bake more cookies!
