The thing that really got me was the attention to detail, everything is coordinated, you can see the table below matches the stickers, our cupcakes were boxed with so much care.

My better half and I tried the Cinnamon Sugar, Chocolate Marshmallow and the Salty Caramel (Only available in November).

The Cinnamon Sugar cupcake is a delicious spicy Buttermilk cake, with no frosting just a Cinnamon Sugar Coating, exactly the kind of thing husband likes.

The Chocolate Marshmallow was my favorite, Dark Chocolate Cake, Dark Chocolate Ganache and a Marshmallow filling!

Last but not least the seasonal Salty Caramel, I am a sucker for Salty Caramel and this cupcake did not let me down, the cake and the frosting were Caramel, very nicely done, not overly sweet and the Frosting was perfectly sprinkled Fleur de Sel.

This the last LA post for now, you can see them all right here, we went to all those places the same day, not shown was our stop at Birrieria Jalisco (warning: website has music!) for some delicious Goat Stew for lunch!

Oh Man, I might have to go back to LA this very moment,or I could just have some diet soda, stupid New Years Resolutions…

I also had an Apple Fritter, that giant one you see above, Apples are one of my favorite fruits and Fritters, come on, any fritter is good! Sadly this baby was a really heavy and too greasy (even for me!) maybe it was an off day for Fritters… Have you had one? Have you been to Bob’s? They also have cool shaped Donuts for kids, so definitely check them out.

What you’re seeing just above here is a delightful Rustic Cherry Tart, an Apricot Panettone and a Chocolate Chip Cookie! The Rustic Cherry Tart was by faaaar the hit here! Not too sweet filling, perfect crumb and a great crust! (I think it was Pate Sucree) The chocolate Chip Cookie was an impulse buy but worth it and the Panettone unfortunately was just a brioche with pieces of Apricot inside. (Bland)

You should definitely stop there, their breads were gorgeous, and the coffee was good!

You know, dear reader, if you ever, per chance, bring home a bunch of yummy little fallen Soufflés you made in class and you mention to delighted eaters that you wish they could have seen them fresh out of the oven, chances are they will ask you to make it fresh.
Thus becoming my first pastry school project reproduced at home, successfully too! After husband (the main instigator) got the ramekins and I bought a huge chunk of Bittersweet chocolate (way more than I needed), I was good to go.

I had a lot of fun making these, after two consecutive days of souffle making, there wasn’t that much that could go wrong, and in fact even my oven followed through!

While I don’t think I should post the recipe from my text book, I will tell you that the recipe I used was just a little different from this one. Oh and instead of 1/2 cup of coffee I used an ounce of Bourbon (I’ve been adding Bourbon to desserts a lately).

Pastry School is going by too fast! Can’t wait for tonight we will taste our Panna Cottas and Gelées!

ps: I know the writing in this post is a little janky, I am having my first (and last) sugar hangover today… I’m a little out of sorts…
